Serves 4

12 pitted prunes

12 whole blanched almonds

Couple of glasses of Marsala or Madeira wine

250g mascarpone

30g ground almonds

30g soft brown sugar

2 eggs

1 Put an almond inside each prune, place them all in a bowl and cover with the Marsala or Madeira. Cover and leave overnight, or for at least six hours.

2 Heat the oven to 160°C and butter a 20cm ceramic baking dish. Place the soaked prunes at even intervals around the baking dish.

3 Beat together the mascarpone, ground almonds, sugar and eggs until smooth, then pour over the prunes.

4 Cover the dish with tin foil and bake in the oven for about 25 minutes. Then remove the tin foil, bake for a further 15-20 minutes, and serve immediately.
